Glycerolysis can be a useful technique for production of mono- and diacylglycerols from triacylglycerols present in avocado oil. In the present work, the effect of catalyst and co-solvent concentration on low-temperature glycerolysis of avocado oil was investigated at 40 degrees C of reaction temperature. A hydrodynamic cavitation system was used to enhance the miscibility of the oil and glycerol phases. NaOH and acetone were used as catalyst and co-solvent, respectively. The experimental results showed that the catalyst and co-solvent concentration affected the glycerolysis reaction rate. The catalyst concentration of 1.5% and co-solvent concentration of 300% were the optimised conditions. A suitable amount of NaOH and acetone must be added to achieve an optimum of triacylglycerol conversion.
