Kuat Tarik Edible Film Bahan Dasar Pati Sagu Dengan Penambahan Gliserol Sebagai Plasticizer

Abstrak. Penelitian ini bertujuan untuk mengkaji pengaruh penambahan konsentrasi gliserol sebagai plasticizer terhadap kuat tarik ÃÂ edible film. Metode yang digunakan pada penelitian ini adalah metode RAL Non faktorial. Konsentrasi gliserol yang digunakan terdiri dari 4 taraf yaitu G1 sebesar 0%, G2 sebesar 2%, G3 sebesar 2,5% dan G4 sebesar 3% dari total volume larutan edible film. Perlakuan dilakukan sebanyak 4 kali dengan 5 kali pengulangan sehingga diperoleh 20 percobaan. Data hasil penelitian dianalisis menggunakan ANOVA. Apabila hasil yang diperoleh berpengaruh nyata maka dilakukan uji lanjut beda nyata terkecil (BNT)ÃÂ menggunakan SPSS. Nilai kuat tarik yang diperoleh dengan variasi konsentrasi ÃÂ gliserol (0%, 2%, 2,5% 3%) yaitu 21 kgf/cm2, 84 kgf/cm2, 82 kgf/cm2, 81 kgf/cm2. Berdasarkan Japanese Industrial Standard (JIS) hasil kuat tarik terbaik yaitu dengan konsentrasi gliserol 2%. Namun nilai kuat tarik yang dihasilkan pada penelitian ini belum memenuhi Standar Nasional Indonesia (SNI).Tensile Strenght Edible Film Sago Strach Base With Additionof Glyserol As PlasticizerAbstract. The concentration of glycerol used consisted of 4 levels, namely G1 of 0%, G2 of 2%, G3 of 2.5% and G4 of 3% of the total volume of the edible film solution. The treatment was carried out 4 times with 5 repetitions so that 20 experiments were obtained. The research data were analyzed using ANOVA. If the results obtained have a significant effect, then a further test of the smallest significant difference (BNT) is carried out using SPSS. The tensile strength values obtained by varying the concentration of glycerol (0%, 2%, 2,5% 3%) were 21 kgf/cm2, 84 kgf/cm2, 82 kgf/cm2, 81 kgf/cm2.ÃÂ Based on the Japanese Industrial Standard (JIS) the best tensile strength results were with 2% glycerol concentration. However, the tensile strenght value produced in this study did not meet the Indonesian National Standard (SNI).ÃÂ
